Every subtask starts with three statuses: New, In Progress and Done. Subtask Statuses lets an admin add your own, such as Cancelled or Blocked, so a subtask can say what actually happened to it.
Configure Settings → Organization → Subtask Statuses. The page needs the Configure Organization permission (MANAGE_ORG_CONFIGURATION), held by the default Owner and Admin roles. The three built-in statuses are listed first and cannot be changed.
You can rename or recolor a status later, and archive one you no longer use (turn on Show Archived to see and restore archived statuses). An organization can have up to 50 of its own statuses.
A Finished status completes the subtask the same way Done does. That matters because an item with open subtasks is not considered done: once every subtask is in a finished status, the subtask no longer holds its parent item open. A subtask marked Cancelled (counting as Finished) therefore stops blocking the item it belongs to.
Pick the status on any subtask from its status cell in the subtask list, the same place you choose New, In Progress or Done.
The Formatting Rules page can also mark subtasks. Under Strikethrough Subtask Statuses, tick the subtask statuses (built-in or your own) whose subtask title should show in red with a line through it, the same way struck-through item statuses appear.
Formatting Rules
Make items in chosen statuses stand out everywhere: a red, struck-through title and an X on the item icon, so cancelled work reads as cancelled on every screen.
